Crock-Pot Dairy Free Creamy Potato Soup

My youngest daugther is lactose intolerant, so, I am always looking for a way to make my favorite recipes dairy free. This was tonight’s dinner :

Crock-Pot Dairy Free Creamy Potato Soup

2 1/2 lbs red potatoes, diced
1 large onion, diced
3 stalks celery, diced
pepper to taste
5 cups water
1/4 c chicken base
1/2 flour
2 cups Almond milk (not vanilla flavored)
Veggie Slices (cheese alternative) (optional)
Bacon (optional)

Prepare vegetables. Combine potatoes, onion, celery, pepper, water and chicken base into crock pot and cook on low for 6-8 hours or high for 3-4 hours.

In a small bowl, whisk together the flour and almond milk. Stir into the soup. Cover, and cook another 30 minutes before serving.

Serve with grated cheese (Veggie Slices) and crumbled bacon.
